My Mom's Beef Stroganoff Recipe

(tweaked by me for Keto!)

Prep Time 15 minutes

Cook Time twenty minutes

Total Time 35 minutes

Ingredients

  • two tbsp olive or avocado oil
  • ane small onion, sliced
  • 1 tsp minced garlic
  • 1 tsp dried thyme
  • common salt and pepper to sense of taste
  • ii tbsp tomato paste
  • two tbsp reddish wine vinegar
  • 1 cup beef stock
  • 8 ounces sliced mushrooms (any kind)
  • 1 lb cooked beefiness, thinly sliced
  • i/2 cup sour cream

Instructions

  1. Heat oil in frying pan on loftier, then add onion, garlic, thyme, salt and pepper
  2. When onions are wilted add tomato paste, scarlet wine vinegar, beef stock and mushrooms.
  3. Simmer for 15 minutes until mushrooms are cooked through.
  4. Add together sliced beef and simmer another few minutes until heated through. Adjust salt and pepper to gustation.
  5. Remove from heat and stir in sour cream.
